Recipe for Polish Pancakes


So...

for 500grams of mushrooms take:
a small onion - chop finely and fry in a little oil,
add the mushrooms (cleaned and finely sliced) and salt/pepper/seasoning to taste. Cook over a medium heat until the mushrooms are visibly done. Drain the water from them if a lot remains.
Set aside.

Whilst the mushrooms are cooking, make the pancake batter;
Take 3 eggs, break into a large bowl and whisk.
Into this add fine white flour slowly, ensuring the mixture stays smooth. To this add milk (bit by bit), a little salt and more flour until the mixture is quite thin. Keep whisking it all the time or it'll have lumps (and look real dodgy!) Then make pancakes with it :)

So now you have to combine the two -
You'll need to grease a baking tray,
then take 3 bowls:
one with cheese like cascaval,
another with a couple of eggs and beat them,
and the last with breadcrumbs (pesmet).

Into each pancake place a little bit of the mushrooms, a little bit of cheese and roll them into a parcel. Now, dip into the egg mixture and roll in the breadcrumbs. Voila! It's ready to place on the baking tray...

Put them into the oven for about 20 minutes at 180 degrees celsuis. Basically, you don't want to over-do them because then they'll taste like cardboard! :)
